Since olive oil is produced for the juice of the olive fruit and not the pit, it is very sensitive to oxygen, light, and temperature; much like a juice like orange juice.

 

Exposure to Light, Oxygen and Temperature can be effectively controlled for short periods of time during harvest and during the milling, storage, and botlting phase of production. 

 

Once it is properly bottled and protected from light and oxygen exposure, the only thing remaining is temperature control. This is where the olive oil indistry has failed to protect the quality of olive oil the consumers are paying for. 

 

The latest research has shown that olive oils stored at room temperature in sealed bottles lose on average 46% of the phenolic content. 

 

Phenolic content is the newest measure of quality of olive oil because it is directly related to its health benefits. 

 

EU health claim labelling regulation for polyphenols in olive oil states:

Consumption of olive oil polyphenols contributes to the protection of blood lipids from oxidative damage.

"The health benefits of olive oil are 99 percent related to the presence of the phenolic compounds, not the oil itself," says Nasir Malik, research plant physiologist at the U.S. Agriculture Department's Agricultural Research Service. 

 

Additional preliminary research has indicated a number of other benefits to the regular consumption of olive oils rich in phenolic compounds on a variety of conditions.
